Oogway isn’t native to China.

I remember the dodos in Ice Age. In that movie, they're portrayed stereotypically as very stupid creatures, which is a common misconception.

In fact, considering how dodos’ brains were similar to pigeons’ brains, they were most likely pretty smart.
